Apple Pie Parfaits

Nothing screams “fall” to me more than baked apples!  These Apple Pie Parfaits are the perfect sweet little treats to whip up on the fly when you’re in the mood for a homemade apple pie, but don’t feel like dealing with making the real thing.

Even before you take your first bite, the aroma wafting from the oven alone will satisfy your cravings.  You just can’t go wrong when apples, cinnamon, and maple syrup are involved!

All you need is one apple, two ramekins (mine are 7 ounce, link below), and a few other things you probably have in your pantry already.  And I assure you that even before they’re baked, you will feel like you dove right into fall. Don’t you feel like you could just eat this raw?

But once you pop them into the oven, the aroma will fill your house!  They come out looking almost identical to as they went in, except that they’re kissed with some color.

I chose to use a large honeycrisp apple for this recipe (and in my video), but you can definitely just use what you have on-hand, including some leftover straggler apples from your last apple picking excursion…yep…we have some left too!

In fact, the first time I made these parfaits, I did use about two small apples from apple picking and they came out great!

This is the perfect recipe to have in your back pocket when you’re looking to whip up an easy dessert or breakfast on the fly.

The Greek vanilla yogurt is what makes it a parfait.  You need that creaminess and mouthfeel to balance out the apples, since they don’t produce a lot of juice.  The apples end up keeping their shape and remain just a bit crisp.

Feel free to go nuts and forgo the vanilla yogurt for some vanilla ice cream!  But with the yogurt, this is a lighter guilt-free treat that you can enjoy any time of day (or year), and it’s the perfect way to hang on to that very last bit of fall.

Apple Pie Parfaits

When you don’t feel like making apple pie, but you want something just as good.

Ingredients

  • 1 large Honeycrisp apple, diced
  • 2 teaspoons maple syrup
  • 2 tablespoons old-fashioned oats
  • 1 teaspoon coconut oil melted (plus more for greasing ramekins)
  • ¼ teaspoon cinnamon
  • ½ cup Greek vanilla yogurt

Instructions

  • Preheat oven to 400ºF and grease two ramekins with coconut oil (mine are 7 ounce, but it doesn't really matter what size you use).
  • In a bowl, combine diced apples, maple syrup, oats, coconut oil, and cinnamon. Divide mixture into the ramekins.
  • Place the ramekins on a baking sheet and bake for 20-25 minutes or until apples are softened but still a bit crisp and hold their shape. Remove from the oven and allow it to cool to room temperature.
  • Top each ramekin with a dollop of yogurt and serve.

TIPS: If you're going to use smaller apples from apple picking, maybe use 1 1/2 or 2 apples, depending on their size. If you're going to use a tart apple, consider boosting up the amount of maple syrup.
