Apple Pie Parfaits
When you don’t feel like making apple pie, but you want something just as good.

- 1 large Honeycrisp apple, diced
- 2 teaspoons maple syrup
- 2 tablespoons old-fashioned oats
- 1 teaspoon coconut oil melted (plus more for greasing ramekins)
- ¼ teaspoon cinnamon
- ½ cup Greek vanilla yogurt
Preheat oven to 400ºF and grease two ramekins with coconut oil (mine are 7 ounce, but it doesn't really matter what size you use).
In a bowl, combine diced apples, maple syrup, oats, coconut oil, and cinnamon. Divide mixture into the ramekins.
Place the ramekins on a baking sheet and bake for 20-25 minutes or until apples are softened but still a bit crisp and hold their shape. Remove from the oven and allow it to cool to room temperature.
Top each ramekin with a dollop of yogurt and serve.
TIPS: If you're going to use smaller apples from apple picking, maybe use 1 1/2 or 2 apples, depending on their size. If you're going to use a tart apple, consider boosting up the amount of maple syrup.
