How To Be A Sauce Boss: Our Skillshare Class!

Do you want to know how to be a sauce boss? I feel like I know a thing or two about making successful sauces. All of my friends and family have nudged me to consider bottling some of my homemade sauces because they think I have a knack for them. I would have to say I think I do too, because making really good sauce is my passion! I believe that any dish can be saved by the sauce and that’s why it was natural for me to make a Skillshare class about it!

We wanted to jump off the surprise success of our first Skillshare class, where I taught you how to cook with intuition. In this second class, I wanted to help you continue on with that journey by taking the next step, which I believe is knowing how to master sauces.

If you can make a few reliable sauces, you can make dozens of recipes. The sauces I focus on are all jumping off points for you to expand your creativity.

Not only do I show you how to make 7 superstar sauces, I also show you how to use them in a recipe and give you suggestions on how to tweak them to use them in different applications. For instance, we learn how to make a bechamel, which can easily be turned into a cheese sauce, and then can be used for mac and cheese, nachos, or poured over a baked potato. I even show you what to do with your leftover bechamel if you have some remaining after you’ve made your casserole or pasta bake.

I honestly think I can’t help myself. My absolute joy is teaching and sharing. And I can’t just give the bare minimum…I have to go all out and explain the details. This is why I truly do have a passion for teaching home cooks how to gain confidence in the kitchen.

I’m also a practical person. I like reusing and stretching ingredients. If your veggies are about to go bad, throw them into a stir fry. If your chicken is dry, don’t chuck it…douse it in a vinaigrette and put it over a salad.

In my real life, I don’t always rely on recipes. GASP~ but Julie, your job is to write recipes! I know…but the thing is that I DO know a lot of recipes by heart, because you always have to start out with some basic knowledge. But once you cook a lot, you start to gain that intuition naturally and then you can go off script. That’s why it’s important to learn some proper sauces. That way, when you’re in a recipe rut, and you’re rummaging through your fridge, pantry, and freezer, you can rely on the sauce first. Think about what kind of sauce you can make and then look for the vehicle you want to put it on.

That’s how I know whether I’m in the mood for pasta, noodles, rice, cous cous, or a salad for dinner. I just use what I have. In fact, isn’t that the whole concept of our cooking show, “Bits and Pieces?” It’s all about being resourceful and creative in the kitchen, using a little bit of this and that.
