Bleh. This week, I was testing a couple recipes and they turned into flops. Whenever this happens, I can literally hear a sad Charlie Brown trumpet in my head playing, “wah~wah…” You just feel discouraged, like you wasted your time, ingredients, and energy. It leaves me feeling so unaccomplished. It totally affects my mood. I was for reals Debbie Downer and Negative Nancy.
The only thing that got me through my bad week was avocado toast in the morning.
If you’re not already eating avocados for breakfast, you’re missing out sista. Avocados are buttery, so eating them this way makes you feel like you’re biting into buttered toast, or a bagel with cream cheese, except a more heart-healthy and pretty version. Here’s my non-recipe.
Step 1:
Make some toast. I used wheat bread.
Step 2:
Mash ripe avocado with a fork. Spread it on your toast. I used half an avocado for 2 pieces of toast.
Step 3:
Slice up a small tomato. Put it on top. I used a compari tomato.
Step 4:
Sprinkle the avocado and tomato with salt and pepper.
Step 5:
Eat it. Smile.
The toast is crisp and chewy, the avocado is creamy and buttery, and the tomatoes provide just the right amount of acid and freshness to cut through the richness. GAH…I go nuts over it.
Might I add that Mother’s Day is creeping up on us, so if you want to whip up something special with no cooking involved (unless you consider toasting bread cooking- hey, no judgements here), this is something anyone can easily make.
All I’m saying is whoever receives this little plate of love is one lucky lady.
But if this is too simple Simon for you, and you want to make breakfast a tad more spectacular, then put a poached egg on top. Or simply fry up some turkey bacon, serve with fruit, and…
BOOM.
When you eat avocado toasts, you will feel like you’re in one of those commercials where everything around you moves in slow motion, and smooth R&B music plays out of nowhere as you savor each bite of your breakfast with your eyes closed, in pure bliss and serenity.
Or maybe not.
