Behind the Scenes : Shrimp and Avocado Summer Rolls Episode

One of the reasons I chose to make the theme of Season 3 of our cooking show “Simply Summer Fresh” is because it gets unbearably hot in our little kitchen during the summer.  When we film, we usually can’t turn on the AC because of the noise, and sometimes we can’t open the windows because of the ruckus outside.  When the lights are blaring down on me, and I’m hovering over a hot stove, our kitchen turns into a sauna.

That’s why I DEFINITELY knew I was going to make fresh spring rolls aka summer rolls as one of our episodes this season.  There’s minimal cooking involved, and all the ingredients are light and refreshing.

We started out our shoot with a staring match between me and a construction worker outside my kitchen window.  He was installing new gutters and finishing up the work that has been going on for the past few months.  Eventually, he made it onto our deck and there was no way we could start filming with him standing there.

We try our best not to shoot on days where there’s activity directly outside our window, such as lawn mowing or construction, but sometimes it can’t be helped.  This day was one of those days and we just had to work around it.

I just gotta say…you guys always make my day with your comments you leave on YouTube!  I know you like seeing our bloopers, and some of you even request for MORE!  Well…this time I think we delivered!  I think I was distracted from the heat and I kept making weird mistakes. It could’ve also been that this was our 3rd shoot of the week and by this point, I was probably getting a little worn down and loopy.

But thankfully through the magic of editing, our actual recipe video looks pretty seamless, despite the (many) re-takes and hiccups.  And even though this recipe is normally REALLY QUICK to make, our shoot went way longer than expected.  I thought it was going to be one our faster shoots too, but I should know by now not to jinx myself.

In any case, I can’t wait for you to see our recipe video… but I’ll warn you now…it will probably make you really hungry.  Even as I was making these summer rolls, my stomach kept on growling!  I couldn’t wait to sink my teeth into them and I could hardly get through the photoshoot at the end.  It’s my idea of perfect hot weather summer food, and eating them was the perfect way to end our shoot.
