New Friends, Dog-Sitting and Mexican Food

A while ago, our friends asked us to babysit their beloved member of the family, Mister Lee. Yes, that is his real name, and if you know this couple, it makes perfect sense for them to come up with such a strange name for their dog. And no, their last name is not Lee! Joe was hesitant at first because it was going to be for several days and he’s never owned a dog before. But I am a seasoned dog-lover and one-time owner. I still miss my little Teddy.  

So after some coaxing, Joe agreed to adopt him for the weekend. Turns out, he was the most perfect well-behaved dog ever so it was a cake walk. Simultaneously, we decided to invite new friends, Jason and Lynda over to our place. We know how they feel as they are new transplants to California, so we befriended them right away, and welcomed them to our home.

I went to the Mexican grocery store that morning and picked up some essentials for the meal, including fresh white corn, cilantro and some freshly baked telera rolls.   I decided to make Mexican style corn and chicken tortas. The corn was slathered in a mixture of sour cream, mayo and Parmesan cheese, then sprinkled with hot cayenne pepper, more Parmesan cheese and a healthy squeeze of fresh lime juice.  The chicken was marinated, grilled, sliced and encased between the soft and chewy delicate bread.

Jason and Lynda asked if there was anything they could bring and I just said they could bring snacks or whatever they felt like bringing.  Oddly enough, they showed up at our door with tortilla chips, guacamole and salsa!  Poifect!

The weather was just gorgeous that day so we ate with the door open to let the sunshine and breeze in.

We ate, talked and got to know one another better while Mister Lee had a siesta in the sun. Happy Friday everyone! We’ll be going camping with a group of married couples from our church this weekend, so adios and enjoy your weekend as well!
