Buttermilk Bacon Biscuits

It all started when I decided to try making biscuits from scratch in time for Mother’s Day.  I thought they came out fine, but I wasn’t completely satisfied with the flavor.  This recipe also required me to use a food processor.  I mean, I have no problem using one, but I know that there are tons of biscuit recipes out there that don’t require anything more than a bowl and your hands.  And personally, I think that’s the way it should be.  To me, making biscuits should be a relaxing, old-fashioned, puttering around in the kitchen on a lazy Saturday morning kind of activity.   Read more

Shrimp and Tofu Coconut Curry

Should I really be calling this dish Curry in a Hurry… or even Curry Without Worry?  Hmm… maybe, but you can decide after you make it.  I think the best part of this coconut curry is that you can throw in whatever bits and pieces (ahem) you have lying around in your fridge and it will probably still come out good.  So this is a great recipe to keep in mind for those kinds of days.  You can even be prepared by keeping most of the base ingredients in your pantry.  All you need is curry powder, soy sauce, tomato paste, and coconut milk.  How easy is that?   Read more

Easy Shrimp Pad Thai

All I gotta say is the next time you’re craving an easy and light version of Pad Thai, remember this recipe.  You don’t have to be intimidated here because I won’t ask you to make your own tamarind juice or run around to find palm sugar and dried shrimp.  All you need are ingredients that you can probably find easily in most grocery stores.  You might have to scamper towards the International foods aisle, but the only things you need from there are dried rice noodles, soy sauce, and Sriracha sauce.  But let’s not kid ourselves, you probably have Sriracha and soy sauce in your kitchen right now anyways.   Read more

Spaghetti Squash with Easy Meat Sauce

I made this dish for my husband and in-laws and they all loved it.  They thought it was so flavorful, unique, satisfying, and light at the same time!  Is that even possible?  Sure it is!  It’s lighter and lower carb, but hearty enough to fill you up so that you don’t even miss the pasta.  I’ve heard people say this line before, in regards to spaghetti squash, but I was kind of skeptical about it.  I thought to myself that there was no way a SQUASH could possibly replace a comforting plate of pasta.   Read more
