Simply Summer Fresh!

Simply Summer Fresh!

Well it’s been a while since updating, but that’s cuz I’ve been busy!  Word got around that I was running cooking classes and Pastor Peter from our church asked me if I could teach a class in the church kitchen, as a summer activity.  I’ve been wanting an outlet to serve so I said yes and it turned out to be a lot of fun.  I required everyone to bring their own cutting board and sharp chef’s knife, and I of course provided the rest.  We did about 4 different recipes reflecting the tastes of summer, focusing on fresh fragrant herbs, tomatoes, bright colors and light eating.

After the class, people from other summer classes came trickling in to see what the wafting aromas and sounds of laughter were all about. Hey when I’m around, the par-tay don’t stop, right? The class did an excellent job and they were so happy to learn such easy recipes to add to their summer eating.  They were an awesome bunch.

Mmmmm…my mouth actually waters when I see fresh herbs!  Basil, mint, and thyme.

Here I’m demonstrating how to quickly roast a pepper while the class is put to work, peeling off the charred skin.

This is one of my favorite shots that Joe captured of the night. You go boy!

A gourmet sandwich of both fresh and roasted vegetables with a layer of cream cheese and homemade pesto.

Freshly roasted peppers: better than the jarred kind.

Tomato vine in a bowl.  I dunno, Joe liked this picture.

Multi-grain baguettes hug the juicy, fresh sandwiches

Such good, diligent students!

The class learned how to marinate chicken tenders in herbs and got to take them home while we cooked some up that I marinated in advance so we could all taste them together.

We hope that those who joined the class had oodles of fun.  I hope I can do another class at church again.
